General description:
Yeast extract is produced through autolysis of food grade baker's yeast cells of species Saccharomyces cereviseae. It comprises the water-soluble components of the yeast cell, the composition of which is primarily amino-acids, peptides, carbohydrates and salts.
Yeast extract is naturally rich in nucleotides coming from RNA hydrolysis of yeast cells, it provides strong Xian/Umami taste to intensify the overall taste of food applications. It is a perfect clean label and natural ingredient.
